We have converted a building to high hygienic standards for the production of artisan cheese, using milk from a neighbouring dairy herd. Due to the nature of dairy the health and hygiene standards are high and the paperwork has to be presented in a stringent format. We would like to use a dairy scientist consultant to help us gain a greater understanding of the science of cheesemaking and our cheese which will then lead onto the launch of future cheeses and the employment of staff as our company grows. We are at a very exciting stage of the company and through external consultation we can really make the company a success for our rural community.
