Currently, coffee, mainly grown in developing countries reaches the consumer through a supply chain that is set up to treat coffee as a commodity. However, within western coffee consuming markets need is evident for traceable, high quality coffee. Since 2005, UK speciality coffees sales have grown by 17% in while in 2009 Fairtrade accounted for 5% of the total UK coffee market, worth &amp;pound;782m in 2009.
To create the flavour and sense of provenance requested by the consumer, the speciality industry accurately roasts coffee and creates links with suppliers in producer countries. Within this growing market, IKAWA technology meets a need by providing a low cost, easy to use mechanism for the capture and transfer of roast information between buyers and sellers in the supply chain. The technology facilitates facilitate accurate discussions about the flavour characteristics of the coffee. This has particular advantage for small-scale coffee growers in developing countries who currently sell their coffee with little understanding of how changes in production effect flavour.
IKAWA will take its technology even further by developing kitchen counter roasting products which make it possible for individuals to re-create the coffee roasting results that can normally only be achieved by professional coffee roasting experts. This offers coffee connoisseurs and enthusiasts the growing market for speciality coffee a better experience that meets their needs for quality, engagement, control and provenance.</ns2:abstractText></ns2:project>
