the aim of being the first producer of gourmet sea salt in Scotland for the luxury fine food
market.
The Sea Salt will be made using custom designed, low energy evaporation equipment in a
partially automated plant.
The technology used will be innovative within the food and drink sector allowing production
to be fully environmentally sustainable and competitive in line with future expected carbon
reduction targets. The project will be innovative in exploring and developing a salt
production process that uses green energy, where little additional input of heat and electricity
is required.
The key objective at this stage is to initially produce a market/business viability report that
provides indepth analysis of the market for sea salt produced at a facility in Scotland,
including developing business scenarios in order to assess product positioning, price and
current competitors in the market place.
Once the data is collected and if the business is proven to be viable then we will move on to
the next stage of business which is to raise capital to allow us to prove our concept, then
design and build a sea salt processing plant.
The project will be based on the Isle of Lewis and once production is started the business is
expected to have between 10-15 employees by year three. This will add great socio-economic
value to what is classed as a fragile area with little employment opportunities.</ns2:abstractText></ns2:project>
