Since launching in early 2021, BBB has developed a patented process to convert waste pasta into a like-for-like malted barley substitute for brewing beer. Correspondingly, BBB have undertaken feasibility trials and brewed 20,000L of beer using pasta that would have otherwise gone to waste. Applying the process to pasta and other waste carbohydrates, which includes carrots and potatoes (such as wasted frozen chips), the company has clear routes of research; and having already established partnerships with companies such as Dell'Ugo and Wagamama, waste material supply and target markets are well grounded.

By investing in the processing of surplus pasta and other waste carbohydrates for recirculation back into the food chain, it will increase the diversity and volume that BBB can rescue, research and improve production efficiency with which it can be turned into beer. This will reduce food waste from manufacturers and retailers while creating a lucrative revenue stream, reduce CO2 emissions from malting (which accounts for approximately 30% of the environmental footprint of beer), increase biodiversity by easing barley monoculture, reduce food costs and improve food security.

BBB will begin by researching waste streams from manufacture, expanding further into pasta waste (which has a 16% wastage at manufacture by mass), and also from retail waste, which in total make up 1.8 million tons and 19% of all UK food waste ([https://lordslibrary.parliament.uk/food-waste-in-the-uk/)][0]. With Innovate UK funding, BBB can critically investigate and gain new knowledge and skills on the processing of carbohydrate wastes, in a journey to turn them into cheap and eco-friendly malted barley alternative products and a corresponding range of beers.
