Abstract

The core of the Science in Culture Theme is the variety of long-range and challenging interdisciplinary collaborations taking place between researchers in the arts and humanities and researchers in the sciences. A range of disciplines and approaches to interdisciplinary working are represented in the currently funded projects, from Large Grants, to Networking Grants, Innovation Awards, Fellowships, and previously Exploratory Awards. To these there will shortly be added small project awards to groups of Early Career Researchers following a workshop on the Lived Environment.

It is vital that these projects be supported, that the results of their collaborations and their ways of working be made more widely known, and that any potential developments of these projects or synergies be harnessed both to promote and foster the interest of thematic research for a Science in Culture community extending beyond exiting award holders and to illustrate more widely the means and benefits of engaging in interdisciplinary collaboration across science, the arts and humanities.

To carry out the support, capacity-building and development of the Science in Culture Theme in the next phase of the Theme Leader Fellowship a variety of activities and initiatives have been planned as set out below, along with proposals for collective and bi-lateral cross-Theme activities and working.

Description Many scholars from the arts and humanities working with colleagues from the sciences, funded by Science and Culture Awards, have published in Nature and other high profile science journals showing the recognised benefits of significant interdisciplinary research. Award holders engaged the public in their research at many different venues and with a variety of formats. Press coverage of the research was extensive. The Science in Culture Theme and Digital Transformations Theme collaborating with the UK Space Agency combined to put on a day-long event at The Science Museum followed by a workshop on The Wonders and Challenges of Human Space Flight.

In the current period of submission there have been key findings about the nature of smell in consciousness contributing to several peer-reviewed publications. There have been public engagements events with Tate Modern and the Getty Museum and media coverage of research on cooking for cancer patients contributing to the Life Kitchen Cookbook.

In the research project accompanying this award, there have been a number of publications on the nature of flavour perception and the sensory impact on perception and appreciation of flavour, including work on the lack of a clear perceptual distinction for experts and novices between single malts and blended scotch whiskies, and the impact of white noise in the ears on perception of taste in airplanes and how this could be ameliorated. London Stanstead Airport and Caviar House invited me to be a consultant for the design of the best sandwiches to eat when flying at altitude. The Getty Museum have contracted me as a consultant to advise about how to ensure deeper engagement with the permanent collection through provide multisensory experiences to visitors.

During the pandemic, the research on smell and taste became highly relevant. The Leadership Fellow became UK Lead for the Global Consortium of Chemosensory Research set up to gather information and coordinate the response to Covid-related smell loss, and campaigned successfully for Public Health England to recognise loss of smell and taste as a symptom of SARS-CoV-2. Working with ENT surgeons, sensory scientists, and patient advocates, the Leadership Fellow published articles on anosmia and parosmia that informed scientists, medics and patients. Together with his collaborators the Leadership Fellow wrote a deep dive report as part of the British Academy's The Covid Decade for the Office for Science.
Exploitation Route Many companies, designers, chefs, drinks companies, museums and galleries can and have made use of the research to enhance the experience of diners and drinkers, to learn about sensory engagement with collections in museums and galleries.

Many of the outputs on Covid-related smell loss (anosmia) and smell distortion (parosmia) have been taken up by patient groups, medical educators and informed media communicators. They are still being developed by collaborators across the world to help patients manage their conditions.

Description Museums and Galleries have made use of my findings on the multisensory effects on perception of our surroundings. I have also given advice to museums and galleries including Tate Galleries and the Getty Conservation Institute. The Getty Museum has added my proposal for deeper sensory engagement with the collection to their Strategic Plan and I will be collaborating with them for the next 4 years. The food and drinks industry, and fragrance industry have made use of my findings and I have been invited to consult for several companies, including multinationals such as Unilever, Diageo, and Kellogg, Firmenich, Mars Foods. Several chefs and restaurants have incorporated ideas from my research into their practice and the wine industry has invited me to train some of their experts. Special events were run at The UK Champagne Bureau and Berry Bros and Rudd on my designs for Champagne and music matching. I have served as a consultant for a major exhibition at the Trapholt Gallery in Denmark. Invited to present a talk at the Royal Danish Academy of Science to the Science Minister who discussed with me ways that academic researchers could collaborate with industry. Ideas he wishes to pursue. I am contributing to the Tate Galleries catalogue for the retrospective exhibition of Olafur Eliasson as one of his collaborators. My research continues to feature in BBC TV and radio programmes, and the national press. I am on the Science Policy Expert Advisory Committee for The Royal Society. There has been contribution to cooker classes for cancer patients documented in the Life Kitchen Cookbook. Following the outbreak of the coronavirus pandemic, ENT clinical colleagues, patient advocates and sensory scientists worked together to study and contribute to research and support for those with Covid-19 smell loss, studying the neuobiological and social consequences of anosmia and Parosmia. This produced research articles, webinars for patients, raising public and press awareness of the olfactory dysfunction. The Leadership Fellow and collaborators were invited to write a deep dive report on these issues for the British Academy report on Covid and Society for the Office for Science.

Impact The deep dive position paper is an attempt to reflect on what we have learned from responses to Covid-19 by the healthcare sector, the research community and patient groups, and to understand what could usefully be learned about the configuration of collaborative working between these three sectors that could improve trust in medicine and science and better serve society in the aftermath of the pandemic. We look at the ways in which the pandemic increased social awareness of lesser known 'invisible' disabilities that patients have suffered from with little help or understanding. We take olfactory dysfunction (anosmia and parosmia) as a case study, with comparison to Functional Neurological Disorder, as examples where chronic symptoms (smell loss, fatigue) suddenly became acute during the coronavirus outbreak, drawing increased attention from the public, from healthcare services and from scientific researchers.

PI Contribution Together with a team of researchers from the Centre for the Study of the Senses, we ran fourteen taste experiments at Tate Modern over four days, called TASTE AT TATE drawing over 1900 participants from the public. This was part of our partnership with Tate Exchange at Tate Modern to bring a new crowd of visitors to the gallery. The experiments collected data and the results are being prepared for publication. There was press attention for this series of events: BBC Radio 4 All in the Mind recorded there and Barry Smith's experiment, Tasting Shapes, was featured in Victoria Moore's wine column in the Telegraph.A second series of events and experiments will take place in March 2018 called Self-Impressions featuring twenty experiments by artists, engineers, philosophers, psychologists, neuroscientists, looking at how we generate sensory experiences and receive feedback from our environment and from others. This is part of Tate Exchange's theme of Production. A third event on Movement took place over a weekend, occupying the 5th floor of the Blavatnik Building at Tate to run a series of experiments and experiences in collaboration with LMU Munich, Institute of Cognitive Neuroscience at UCL, and Studio Olafur Eliasson.
Collaborator Contribution Our partners at Tate Exchange provided a large floor space on the firth floor of the Blavatnik Building as well as administrative, organizational and press support to help run these experiments over several days. They provided advertising and staff help to prepare and run these experiments. They produced evaluation of the visitor experience.
Impact This was a multidisicplinary collaboration featuring artists, engineers, philosophers, psychologists and neuroscientists. Publications have been produced and submitted and the Getty Institute has asked the team to produce similar experiences and experiments for them in LA. A number of films were made of these events.

Results and Impact This was a talk to one of the largest private foundation funders in Denmark. I was invited to speak about significant interdisciplinary science and humanities initiatives in the UK as the Lundbeck Foundation reviewed evidence to determine how they might extend the scope of their funding in the area of medicine and neuroscience. Together with Danish colleagues from philosophy, linguistics and anthropology we made a case for close collaborative workings between these disciplines and neuroscience.
