Abstract

Abstracts are not currently available in GtR for all funded research. This is normally because the abstract was not required at the time of proposal submission, but may be because it included sensitive information such as personal details.

Technical Summary

The Food & Nutrition National Bioscience Research Infrastructure (F&N-NBRI) is a national coordinating ‘hub’ in nutrition and health and the leading national provider of new and continuously updated data tools and services vital for UK public health research and innovation. It is ideally positioned within QIB to acquire unique understanding of the research needs around data and tools focusing on food gut microbes and health that can benefit the wider research community (academia industry users).
F&N-NBRI will enable the UK to deliver nutritional policy and world-leading science in support of current and emerging national strategic needs in nutrition (food composition and intake) health (e.g. obesity healthy ageing) and sustainability (environment food security). It will add new food data and tools to meet the needs of researchers within QIB and more widely across food biosciences in the UK. It will provide training and capacity development for key users in food and public health and regularly engage with end-users stakeholders and other potential beneficiaries to ensure knowledge exchange. Description The application serves as a valuable tool in conducting dietary intervention studies and clinical trials with both healthy and patient volunteers Some of the features of the FFQ Studies Portal allow users to: *create individual FFQ studies, add study-specific information in the welcome page (text and image), include study-specific questions to be captured from participants *generate unique anonymised FFQ links for each participant, without including any personal participant information track progress of FFQ completion *export analysed FFQ data in .csv format at the touch of a button. Title DIME Study - Anthropometric 
Description Participants self-recorded the following at each of the four study days: height, weight, blood pressure (systolic and diastolic), pulse and waist circumference. A questionnaire about perceived stress and mood was also filled in. The study excel spreadsheet was generated by compiling all individual measurements in one consolidated file. Title DIME Study - Continuous glucose monitor (CGM) & Fitbit (Sleep) 
Description CGM - Participants were asked to fit a CGM on the study day. The raw data is stored in the Abbott Libreview and downloaded through their web interface. 20 files in total, each file containing CGM readings for participants during baseline (7-8 days) and the dietary intervention (14 days). For two participants, CGM data are incomplete/failed to record. Title Food Labelling Dataset 
Description The McCance and Widdowson's Composition of Foods Integrated Dataset (CoFID) dataset, which F&N - NBRI maintain, contains reference data on the levels of nutrients in thousands of the most commonly eaten foods in the UK. This dataset, however, contains some unknown nutrient values, occurring when analysis of a specific compound in a specific food has not been carried out. The absence of this data means that the calculation method becomes very difficult. Therefore, following feedback from users, particularly SME'S and app producers, an updated and improved labelling dataset has been created by estimating the missing values for the most important foods within CoFID. The values were estimated from a number of sources, such as manufacturers' data, scientific literature, food composition datasets from other countries and calculations based on similar foods and ingredients. The new labelling dataset covers 2,914 foods and ingredients from almonds and apples to yogurt and Yorkshire puddings, and is freely available to download from the F&N - NBRI website. The data is continually monitor and updated by F&N -NBRI with current focus on Meat and Poultry.

Impact As indicated in the EU regulations (the provision of food information to consumers (Regulation (EU) No 1169/2011), most food companies have had to provide nutritional information on their pre-packed products since December 2016. The regulation presents a potential financial challenge for food companies to analyze their products in labs and, as an alternative, nutrient labels can also be produced by calculation using generally established and authoritative food composition data. This new labelling new dataset will help food manufacturers, dieticians, nutritionists, software and app producers create the nutrition information for food products and recipes. This labelling data set has been used by SME's to provide labelling for their products.

PI Contribution The project supports the Government School food standards practical guide, 2022, the School Food Plan, the Eatwell Guide and the Government Strategy on tackling obesity. This work is a follow-on activity from the UEA ITeams project of 2022, examining the food composition and nutritional value of school dinners. The underpinning research includes the UK Composition of Foods (CoFID) database, created and managed by the Food and Nutrition - NBRI https://fnnbri.quadram.ac.uk/. The database is the 'go to' standard reference for nutrition and it is frequently used to update information on new or changing food ingredients. This data enables the UK government to deliver nutritional policy and high-quality science and supports current and emerging national needs in nutrition (food composition & intake), health (e.g., obesity, healthy aging), and sustainability (environmental and food security). FDNC data and tools are used in four strategic areas: Research and Innovation; Industry; Healthcare and Consumers; and Policy - to help shape the move to more healthy and sustainable food choices as part of the National Food Strategy. Dr Laura Bardon - establishing an agreement with NORSE one of the leading suppliers of school dinners in Norfolk to share data from meals currently produced.

Title Dietary BIoactives and Microbiome DivErsity 
Description Within the intestines there is a community of micro-organisms known as the gut microbiome. Its composition may vary from person to person, but humans depend on this community to break down some undigested food to produce essential products such as vitamin K, and to perform several other functions. Richer diversity in these communities has been linked to better health, although not all factors for this have yet been discovered. Dietary intake has a big role to play in the composition of the microbiome and studies have observed the effect of carbohydrates, fibre, proteins and fats, but little has been done on the effect of micronutrient intake and non-nutrients such as beneficial plant chemicals. Plants contain some non-nutrient compounds which might impact the diversity of the microbiome. The aim of this study is to determine if a diet high in these plant compounds; polyphenols (compounds found in foods such as blueberries), carotenoids (found in brightly coloured foods) and glucosinolates (found in foods like broccoli) will have an effect on the diversity of the gut microbiome. The study was completed with funding from Horizon2020, Food & Nutrition Security Cloud project

Results and Impact Food & Nutrition National Bioscience Research Infrastructure hosted a successful Stakeholder Engagement Event in London, with 30 attendees from across Academia, Industry (DairyUK, AHDB, Quorn Foods), Big data (GS1, EuroFIR, NIQ Brandbank, FoodBud, Nutritics), Government (DEFRA, FSA, OHID), and professional bodies (BNF, British Dietetic Association, Nutrition Society, Nutritionists in Industry).
There were guest speakers and round table discussions to gather important feedback on the stakeholder's current and future needs in relation to national food composition data -CoFID/McCance& Widdowson
Round table discussion covered - Session 1: Composition data for the UK- its uses, users and plans for the future, Session 2: The future of food data, nutrition and the food system, Session 3: Final perspectives and next steps.
Action plan for next steps has been complied and sent to attendees. All current members of the Food & Nutrition National Bioscience Research Infrastructure team were present at the stakeholder event

He is the founding chair from NNEdPRO and the Director of Research Food security at University of Cambridge. He visited QIB and hosted a seminar on 'The mobile teaching kitchen international initiative - from global to local and the next steps in the UK'. He also took part in a student Q&A lunch and met with some members of the team. We organise for Prof. Sumantra to meet with Dr Natasha Grist -Norwich Institute for Sustainable Development (UEA) and Norfolk local food equity research/practitioner community.

Results and Impact Dr Maria Traka and Duncan Anthony attended the ELIXIR Food & Nutrition Community Biohackathon in Brussels to integrate data across ELIXIR resources. QIB and colleagues from MGnify and Metabolights (EMBL-EBI) used the DIME data to develop metadata mappings across the metagenomics and metabolomics resources.

This work is part of the community flagship Implementation Study, led by Dr Maria Traka and Dr Falk Hildebrand from QIB.

Results and Impact Laura, Liangzi and Pedro collaborated with the Food Museum to host a young curators visit to QIB. F&N-NBRI hosted 6 teenagers aged from 14-16 years and provided an introduction to all things food composition, an intro to Nutrition Science and Epidemiology and explained how AI can be used in nutrition. The presentations followed by a group activity in collecting diet data and diet history. The session ended with a Q&A on what can a career in science look like.
