Abstract
Abstracts are not currently available in GtR for all funded research. This is normally because the abstract was not required at the time of proposal submission, but may be because it included sensitive information such as personal details.
Technical Summary
We focus on five main activities: (a) maintenance and development of the core databases and their publication including dedicated online resources; (b) training for visiting students and researchers globally; (c) representation at international food and health conferences; (d) international networking and (e) research collaboration. Information will be shared with the wider biosciences community through the IFR website and/or directly to each of the databases. All three database will be/ are using the common food description system, LanguaL, enabling exchange and sharing of data and meta-information. The UK Food Composition database will be migrated to FoodCASE, a Java based SQL database, which meets the required standards for food composition documentation, is compatible with proposed CEN Food Data Standards, and can be exported in XML format making metadata available as well as published nutrient values. FDNC will add/ amend data for branded foods and integrate this database with eBASIS, which is based on Microsoft SQL and only requires an Internet Server to operate. Data presentation, manipulation, software tools, additional data describing new foods, compounds or products will be achieved by linking eBASIS to and/ or acquiring data from existing manually-curated structural databases at a rate of 1000-2000 new data points per year. The overlap and interest in nutrients, bioactive compounds and plant-food contaminants is ever increasing and tools for interrogating and manipulating the data will be developed in parallel for epidemiological, health and risk assessment studies. New data will also be added to InformAll and data mining tools developed to make the verified allergen sequence information more searchable and widely accessible to the research community. The scope of the data will be broadened in to include EuroPrevall outputs such as clinical threshold data for use in allergen hazard management and bioactive proteins and peptides found in foods.

| Description | Results from analytical surveys of 192 foods (processed foods, eggs, fish and fish products and fruit and vegetables) were all included in the 7th summary edition of McCance and Widdowson's 'The Composition of Foods' (MW7), published in September 2014. New data for processed foods was obtained from industry to reflect reformulations to reduce content of salt, fat and sugar in UK foods and was included in MW7. All MW7 values were reviewed against information available from manufacturers and other data sources, such as European data compilers (via EuroFIR). New contacts with industry bodies were established in order to facilitate the process of updating and validating food composition data using industry information. Analytical surveys were designed to avoid duplication of data for foods that had recently been analysed by other European data providers (e.g. fish and fish products with Sweden and Iceland). The fully revised and validated electronic version of The Composition of Foods Integrated Dataset (CoFID) was published in March 2015. A new analytical survey of fruit and vegetables was funded and initiated, and the results were part of a further CoFID release in 2019. FDNC continued to work to standardise and harmonise the UK composition data, and initiated efforts to transfer all UK food composition data to FoodCASE, the food composition database management system used by many compilers across Europe. During the timeframe for this award, the eBASIS database was significantly extended with new compositional values covering new plants and compounds. By 2015, there were more than 35,000 data points in the dataset. The BACCHUS EU-funded project also contributed significantly to the expansion of the database, with data for health effects and bioactive peptides added for the first time, and a connection to Crème Global's intake prediction model being established as a health claim tool for SMEs. A new, dedicated FDNC website (https://fdnc.quadram.ac.uk/) was launched in 2012 as a means of disseminating information about the work the group is undertaking to a wide audience. Since its launch, the website has been continually updated with information on food composition data, labelling requirements, our events and projects, and with short blogs on topics of interest. In 2015 FDNC launched a new commercial service, Nutritional Information Solutions (NIS, https://www.nutritionalinformationsolutions.com/) to help small business create product labels that comply with the EU Food Information Regulations (EU 1169/2011), and also collaborated with Nutritics to launch software that enables companies to complete calculations themselves. Working with Trading Standards we provided additional training and support for SMEs to meet the guidelines and provide better labelling data. FDNC were involved in a variety of training initiatives including via the TDS-Exposure project, leading/contributing to EuroFIR working groups and associated workshops, EU project management courses, hosting visiting students and delivering online webinars via the BACCHUS project. The FDNC dataset, along with Brandbank data, were incorporated into a new smartphone app, FoodWiz2, which was developed by a UK SME as part of an EU project (QuaLiFY) that also involved FDNC. We worked with the app developer to conduct a pilot study testing the smartphone app in adolescents in the UK. |
| Exploitation Route | The publication of MW7 was a significant event for many food and nutrition researchers and professionals that use the book as a primary source of information on the composition of foods in the UK. The availability of the complete UK dataset in an electronic format has increased the accessibility of the data, and the first update to the dataset (in 2015) ensured the resource contained the latest data, including those published in MW7. The eBASIS database was updated and extended to include new plants, compounds and types of data - it now includes information on bioeffects and bioactive peptides in meat. The database remains a valuable tool for researchers and industry, particularly in light of the requirements for health claim dossiers. The new NIS service and Nutritics software help small business to produce regulation compliant food labels for their products. The improvement in quality of the UK composition data, and the eventual migration to the FoodCASE system will bring the UK in line with other European countries and enable improved access and sharing of data. |

| Description | FDNC works with UK and overseas users and stakeholders to improve the interoperability of the data on food composition and other nutrition/consumer dietary and lifestyle data. It also develops new and improved uses of the data and mechanisms for dissemination and training, ensuring a broad reach across the food data compiler community and to a range of stakeholders using the data in their work. High quality food composition data is an essential prerequisite for developing healthy eating initiatives, for promoting public health and for increasing the impact of the Quadram Institute Bioscience. FDNC has formed two strategic alliances with Nutritics and EuroFIR providing online, accessible, added-value resources for the food sector, researchers, policy bodies and regulators, creating wider impact for the UK food composition data. FDNC collates vital information on food composition, compiled from sources across the world, and whose impact extends beyond QIB. FDNC will continue to integrate global databases on food composition and make this information openly available in accessible formats and innovative tools. Operating as NIS and working in partnership with Nutritics, the FDNC helps SMEs in the food sector improve labelling to comply with legislation, and therefore helps consumers make informed dietary choices. FDNC has also been involved in the development and testing of a smartphone app (FoodWiz2), and will continue to work with collaborators to provide innovative diet and food solutions to consumers. The launch of MW7 and the updated integrated dataset created much user and media interest. It remains one of the most highly rated and cited nutrition textbooks; by the start of 2019, over 4000 copies of the book had been sold. FDNC continues to work with compilers from other countries to produce standardised and accessible food data, and the movement of UK food data into the FoodCASE software will further improve the harmonisation, documentation and interoperability of the dataset. High quality, up-to-date composition data improves the accuracy of dietary intake estimations, both at an individual and population level. The updated MW7/CoFID data were incorporated in to the HNR dataset for use in the National Diet and Nutrition Survey (NDNS), which provides an understanding of what the UK population is consuming and also informs public health policy. Training has been provided via workshops, training courses, visiting students and webinars ensuring that FDNC resources are widely publicised and that we provided knowledge and training to a wide range of users. We have been successful in recent applications for GCRF funding to help build food composition capacity in both the Eastern Mediterranean Region and Africa, building on similar experiences in the Balkan region. These projects help to grow the compiler community and improve the generation and application of composition data in these regions. New uplift income has been secured on a variety of food and health projects, and FDNC continues to look to diversify application of our resources and our collaborations. New projects include focus on sustainable food supply chain/food waste, nutritional labelling regulations, research infrastructures and personalised nutrition. The FDNC website and newsletter continue to generate considerable national and international interest, and social media has had a considerable impact on our NIS service and allowed us to reach new users. |

BioActive Compounds are defined as inherent non-nutrient constituents of food plants and edible mushrooms with anticipated health promoting/beneficial and/or toxic effects when ingested.Bioactive compounds or phytochemicals have not been historically classified as 'nutrients' but there is mounting evidence that they may help to promote optimal human health, especially in relation to chronic disease. | PI Contribution | The collaboration with myDNAhealth started in 2018, after a member of our team approached Bernie Williams, one of the directors of myDNAhealth, at the Norwich Science Festival to talk about Quisper. There was a clear intention from both sides to collaborate in the area of science-based digital health and innovation. That is why members from the FDNC team have already had several meetings with the company directors, that led to the submission of an application for an INCluSilver innovation voucher on February 2019. |

FDNC provide Nutritics with valuable experience and knowledge in food data standardisation and intereoperability. | PI Contribution | In partnership with other leading organisations, the Quadram Institute has organised a workshop to help researchers from across Africa exploit food composition data, improving local nutrition policies and public health advice. The workshop, which is being hosted by the new confirmed African Research University Alliance (ARUA) Centre of Excellence in Food Security at the University of Pretoria, is bringing together scientists, nutritionists and policy-makers from 11 African countries to share best practice in generating reliable, standardised data on the composition of foods, and set up networks to share data online. These data, and the tools to access and exploit it, underpin the development and implementation of local food and nutrition policies, regulatory measures, labelling and health advice. The Quadram Institute (UK), Wageningen University (NL), the University of Pretoria (ZA) and EuroFIR AISBL (BE) are contributing to this event, which was funded through the Research Councils United Kingdom (RCUK) Global Challenges Research Fund (GCRF); this aims to ensure that UK research takes a leading role in addressing the problems faced by developing countries. Over the course of the five-day workshop, participants will receive expert training in designing sampling protocols, calculating nutrient values, assessing data quality, and using appropriate tools for data compilation, management and data sharing. Through working closely with regional networks, including the FAO International Network of Food Data Systems' AFROFOODS network, outcomes from the workshop will benefit not just the participants, but also the wider community of public health researchers who rely on these data. These networks will also provide a conduit for further future training and capacity building, by hosting online information resources and e-learning, and facilitating scientist exchanges. "We hope that this workshop will help to build local capacity in food composition data management, that will benefit countries across Africa" said Paul Finglas, head of the Quadram Institute Food Databanks National Capability and Managing Director of EuroFIR. "By giving researchers the knowledge and tools to generate data that matches shared standards, we can get more up-to-date data online and searchable so that it can provide a sound basis for nutrition and public health advice." According to the 2017 Global Nutrition Report, nutrition programmes has a $16 return of investment. "Towards attaining the 169 Targets of the 17 Global Goals Sustainable Development Goals (SDGs) approved by each of our governments" stated Hettie Schönfeldt, director of the new ARUA CoE for Food Security led by the University of Pretoria, South Africa in collaboration with the University of Ghana, Legon and the University of Nairobi "targeted approaches to facilitate agricultural and food system transformation are as essential as partnerships in research and innovation in order to attain sustainable food security and nutrition in Future Africa and elsewhere". |

The main aim of this workshop was to identify what services are available from UK Partners and how the UK can contribute to the wider node. | Results and Impact | QIB co-organised (with university of Surrey) a workshop meeting to disseminate information about the Food, Nutrition and Health Research Infrastructure (FNH-RI) and to receive feedback on the initiative from potential UK collaborators. 25 delegates attended the meeting, held at the MRC Conference Centre in London on 11th July 2019. Participants included representatives from a range of UK research organisations and universities working in varying areas of food, nutrition and health, as well as some industry and policy representatives. The meeting included workshops designed to collate the views and ideas of participants relating to the proposed FNHRI initiative. From this workshop, 15 institutions signed the multi-lateral agreement expressing interest in being part of the UK Node of the FNH-RI. QIB/Surrey submitted a short proposal form to UKRI in Feb 2020 requesting support for the FNH-RI initiative, which will be submitted in full to ESFRI in May 2020. |

| Results and Impact | In partnership with other leading organisations, the Quadram Institute has organised a workshop to help researchers from across Africa exploit food composition data, improving local nutrition policies and public health advice. The workshop, which is being hosted by the new confirmed African Research University Alliance (ARUA) Centre of Excellence in Food Security at the University of Pretoria, is bringing together scientists, nutritionists and policy-makers from 11 African countries to share best practice in generating reliable, standardised data on the composition of foods, and set up networks to share data online. These data, and the tools to access and exploit it, underpin the development and implementation of local food and nutrition policies, regulatory measures, labelling and health advice. The Quadram Institute (UK), Wageningen University (NL), the University of Pretoria (ZA) and EuroFIR AISBL (BE) are contributing to this event, which was funded through the Research Councils United Kingdom (RCUK) Global Challenges Research Fund (GCRF); this aims to ensure that UK research takes a leading role in addressing the problems faced by developing countries. Over the course of the five-day workshop, participants will receive expert training in designing sampling protocols, calculating nutrient values, assessing data quality, and using appropriate tools for data compilation, management and data sharing. Through working closely with regional networks, including the FAO International Network of Food Data Systems' AFROFOODS network, outcomes from the workshop will benefit not just the participants, but also the wider community of public health researchers who rely on these data. These networks will also provide a conduit for further future training and capacity building, by hosting online information resources and e-learning, and facilitating scientist exchanges. "We hope that this workshop will help to build local capacity in food composition data management, that will benefit countries across Africa" said Paul Finglas, head of the Quadram Institute Food Databanks National Capability and Managing Director of EuroFIR. "By giving researchers the knowledge and tools to generate data that matches shared standards, we can get more up-to-date data online and searchable so that it can provide a sound basis for nutrition and public health advice." According to the 2017 Global Nutrition Report, nutrition programmes has a $16 return of investment. "Towards attaining the 169 Targets of the 17 Global Goals Sustainable Development Goals (SDGs) approved by each of our governments" stated Hettie Schönfeldt, director of the new ARUA CoE for Food Security led by the University of Pretoria, South Africa in collaboration with the University of Ghana, Legon and the University of Nairobi "targeted approaches to facilitate agricultural and food system transformation are as essential as partnerships in research and innovation in order to attain sustainable food security and nutrition in Future Africa and elsewhere". |

| Results and Impact | Introduction: The inter-relationship between the intestinal microbiome and health is considered to be one of the most important scientific challenges of the 21st Century in the field of Nutritional Sciences. There is evidence in the literature from cellular, animal and human work to show that the intestinal microbiome plays a critical role at the interface between diet, lifestyle, immunity and host health; and there are plausible mechanisms whereby the gut microbiota is intricately linked to the regulation of indices of musculo-skeletal health (MSK) including bone turnover and bone density. The gut microbiome may therefore represent the 'unknown' factor in the pathogenesis of osteoporosis but further research is urgently required to explore these relationships in more depth and to elucidate the precise mechanisms for osteoporosis prevention and treatment. This workshop included a talk entitled "Nutritools website - Dietary Assessment Tools", Tunis, Tunisia, November 2018: Staff from FDNC organized and contributed to the workshop for food composition compilers from other countries in the EMR (Tunisia, Morocco, Mauritania) and, West African countries (Burkina Faso, Togo and Côte d'Ivoire). The workshop was hosted by Professor Jalila El Ati from the National Institute of Nutrition and Food Technology (INNTA), in Tunis. Participants learnt principles and analysis for recipe calculation, the use of yield and retention factors, and sampling composite dishes. |

| Results and Impact | QIB jointly hosted the workshop on standardized methodologies for Food Composition Data in Lisbon Portugal, November 2018. It was jointly hosted with the Instituto Nacional de Saúde Doutor Ricardo Jorge, INSA, Lisbon, Portugal Lisbon, Portugal, November 2018, analytical training: FDNC organised a 3-week training course on analytical methods for nutrients in foods, for experts from Sudan, Egypt and Jordan. The use of new analytical methods by these countries will lead to the improvement of national datasets. It is expected that these experts will, in turn, train fellow professionals in their own country on food composition data and laboratory analyses. The workshop was hosted by Dr Helena Soares Costa at the Instituto Nacional de Saúde Doutor Ricardo Jorge (INSA), Lisbon. Training involved analysis of foods for nutrients including vitamin B1 and B2, vitamin C, vitamin A, E, D2, D3, fatty acids, amino acids, minerals, fibre. |

| Results and Impact | Workshop on standardized methodologies for creating Food Composition Databases, with CAPNUTRA, Belgrade Serbia Belgrade, Serbia, October 2018: Food composition compilers from Iran, Iraq, Pakistan and Kuwait received training and guidance in standardised methodologies for creating national food composition databases. The workshop was led by Professor Maria Glibetic from the Capacity Development Network in Nutrition in Central and Eastern Europe (CAPNUTRA) and included training with Mark Roe, EuroFIR, Paul Finglas and Dr Marisol Warthon-Medina both from FDNC. This talk was also delivered at the workshop "Food composition data bases in Europe as important research infrastructure in food and nutrition research Symposium on sustainable food systems for healthy diets in countries of Central and South Eastern Europe (CSEE) with integrated training on food consumption data collection and strengthening the thematic regional networking.
