Abstract

Managing perishability represents a challenge in supply chain management for a varied set of industries. Food supply chains require heavy investment in cold chain logistics and warehousing to manage perishability of its products. However food losses and waste are a persistent issue associated with increased environmental and economic costs. Previous research have focused on developing new inventory replenishment policies and strategies to meet demand with supply at the same time holding minimum safety stock. From a marketing perspective, previous studies have also looked at dynamic pricing and promotions to minimise waste. In this research, the application of digital technologies such as internet of things and distributed ledgers, will be explored as a potential enabler for improved supply chain coordination and collaboration leading to reduction of food waste.
