Abstract
Overall, this thesis seeks to model pathways to achieving desired levels of red and processed meat consumption through a tax in Mexico. First, to do so, it seeks to characterise potential substitution behaviours under a tax that would aim to reduce red and processed meat consumption. Then, it aims to simulate responses to various tax stratified by income level. Lastly, it will then quantify the health and environmental impacts associated with shifts in consumption attributed to the tax.
