Abstract
Industrial meat production has a dramatic impact on our environment and health through GHG emissions, overuse of land, water and antibiotics, and zoonoses. Cultivated meat (CM) - the creation of meat from cultivated animal stem cells - promises to mitigate these problems provided it overcomes the key barrier of high feedstock cost. We have devised technology to reduce the cost of feedstock by through the development and production of new ingredients and formulations that enable price parity of CM with conventional meat, and will scale to bring this technology to market in this project. CM is projected to reach 35% of the global meat market by 2040.
