Model-driven development of cell culture media for optimised production of cultivated fat, the hero ingredient for next-generation meat-alternative products

Abstract

Large-scale animal agriculture is inefficient and damaging to humans, animals, and the environment. Demand for plant-based meat is soaring, but products still do not match the sensory properties and cooking performance of traditional meat. Plant-based meat is missing one crucial ingredient: real animal fat.

Fat is the secret to delicious food. The plant oils used in many meat alternatives aren't a suitable substitute because they are structurally and chemically different to animal fat, resulting in a low melting temperature, poor taste and greasy mouthfeel. The world needs a clean source of real animal fat to create plant-based meats that look, cook and taste like the real thing.

Hoxton Farms' cultivated fat, sold as a B2B ingredient, is the key to unlocking the next generation of meat alternatives. Their revolutionary technology platform combines mathematical modelling and synthetic biology to redesign mammalian cell-culture from the ground up and grow high-performance, cost-effective cultivated fat. This model-driven approach will produce cultivated fat at a lower cost than that of competitors, and will allow Hoxton Farms to offer customers exclusive fats with customised sensory, nutritional and cooking profiles.
