AI Powered Autonomous Food Safety Management with Anomaly Detection

Abstract

Primority is a UK based food safety solutions company that helps some of the UK's best known food brands manage food safety information to global food safety standards and national food safety laws. Their 3iVerify solution already manages food supply chain information through online, collaborative supplier and food material approvals, corrective action management, document management and AI powered supply chain data gathering and processing with unique anomaly detection technology which helps predict food safety risks in the supply chain (AI Scan).

We wish to build further on our existing, Innovate UK funded, AI Scan solution by developing further Artificial Intelligence and Anomaly Detection Technologies to improve food safety and industry competitiveness and reduce food safety, provenance and fraud risks.

This project focuses on bringing together Artificial Intelligence (AI) generated food safety and threat data, Anomaly Detection (AD) technology and a new AI supply chain and process modelling tool to automate the generation, management and monitoring of mandatory HACCP (Hazard Analysis Critical Control Points) and TACCP (Threat Analysis Critical Control Points) management systems.

We will do this by applying AI and Machine Learning (ML) Algorithms, already proven to work with in aviation and in the food supply chain and food processing and production data, to automate the creation of the HACCP , VACCP and TACCP management system through a new supply chain process model which will automatically identify food safety hazards and threats both in the supply chain and in production and distribution processes.

This will have a positive effect on food companies, retailers and consumers by dramatically reducing the time taken to launch new products and manage the risks to food safety, quality and provenance of existing products.

Food companies will benefit from a reduction in 'go to market' costs, time to market and food recall, withdrawal and rejection risk in addition to reducing the risk of prosecution for non compliance with the law. Retailers will have greater confidence in their suppliers and consumers will benefit from a safer food supply chain and protect their brand reputation.

This project will help make food companies more competitive by helping speeding up food product innovation whilst reducing food safety, fraud and intentional contamination risks whilst protecting their brand reputation and positively impact food waste and food recall costs by reducing the risk of food recalls.
