Abstract
Bringing together world-class researchers from Sheffield, Leeds, Bristol, Cambridge and City Universities, this proposal seeks to transform the UK food system 'from the ground up' via an integrated programme of interdisciplinary research on healthy soil, healthy food and healthy people (H3). The H3 Consortium addresses the links between food production and consumption and takes a whole systems approach to identify workable paths towards a transformed UK food system, delivered via a series of interventions: on farm, in food manufacturing, distribution and retail, and in terms of the health implications and inequalities associated with food consumption in UK homes and communities.
The proposed research addresses all of the UK government policy drivers outlined in the Call text from diet-related ill health to the reduction of greenhouse gas emissions, from biodiversity to soil health and water quality, rebuilding trust in the food system, promoting clean growth and supporting the translation of scientific research and new technologies for the benefit of the UK economy and society.
Our approach is thoroughly interdisciplinary, combining world-class soil and plant scientists, health researchers, economists and social scientists The research team have many years' experience of working together, leading interdisciplinary research centres, co-supervising PhD students and collaborating on numerous research projects including the N8 agri-food programme.
We take an integrated approach to the agri-food system, recognizing its inherent complexity and addressing the governance challenges that arise from the rapidly changing regulatory landscape.
Our proposed research involves six interconnected work-packages. The first advances novel growing technologies via fundamental research into agricultural practices that have the potential to transform the quality of food we grow while minimising its environmental impact. The second aims to combine hydroponic and conventional soil-based agriculture, creating a linked network of hybrid demonstrator farms in peri-urban areas to encourage improvements in dietary health and environmental sustainability. The third extends these ideas to the landscape scale, evaluating the benefits of regenerative agriculture in terms of reduced fertiliser and pesticide use and increased food quality. The fourth addresses the key public health challenges of micro-nutrient deficiency through the application of state of the art methods of biofortification, enhancing the nutritional value of foods that are already part of established UK diets. The fifth seeks to increase the consumption of fibre with its attendant health and sustainability benefits, based on lessons learnt from the Danish wholegrain partnership; while the sixth seeks to increase food system resilience to economic, health and environmental shocks through collaborative research with retailers and consumers. Three cross-cutting themes (CCTs) provide further integration across the work-packages. The first focuses on the application of integrative methods such as LCA and scenario-building approaches to assess the environmental, social and economic impact of different interventions and policy options. The second focuses on issues of consumer demand, public acceptability and affordability; while the third ensures that stakeholder involvement features consistently throughout the programme, with a strong emphasis on knowledge exchange and impact within and beyond the five-year funding period.

| Description | While our work is still at a relatively early stage, there are some encouraging early findings to report: ? Our lab-based studies have demonstrated the potential use of polyurethane foams as a replacement for rockwool in hydroponic growing systems. These are novel foams can be recycled, reducing environmentally damaging waste. The use of synthetic microbial communities in hydroponics also has the potential to reduce pesticide reliance, contributing to reduced agro-chemical residues in crop products and waste streams. ? Early findings for our on-farm environmental monitoring provide evidence of the benefits of regenerative agriculture in terms of both biodiversity and soil health. ? Collaboration with our Danish colleagues has established the potential for transferring experience from the Danish Wholegrain Partnership to the UK and some of the barriers to increasing fibre consumption among low-income consumers. This work is being progressed in partnership with the Food and Drink Federation. Some reformulated high fibre foods have been successfully trialled in school breakfast settings, this work is ongoing. Our low input hydroponic horticulture also shows promising early results with leafy green production. |

| Description | Our research is having an impact on various sectors including government, business and civil society. Some of these impacts are at a relatively early stage and will continue until our project ends in December 2025. ? Regenerative farming approaches are being co-designed and delivered with farmers at landscape scale. These will be assessed for their effects in terms of crop quality and environment impacts as well as their cost effectiveness for businesses. Baseline measures have been taken from which subsequent impacts can be monitored. Longer-term, our research will contribute to the wider adoption of regenerative farming practices with beneficial environmental impacts being delivered in an economically sustainable way. To date regenerative agriculture practices can be seen to contribute to improved soil health and biodiversity, we have shared this information with a farming cluster. ? Farmers are also involved in trialling new low cost, low carbon hydroponic growing systems on exemplar crops using synthetic microbial communities and novel substrates to grow crops on urban and peri-urban farms. In the longer term, the hydroponic approach could be combined with the use of regenerative approaches on hybrid farms to offer a more financially and environmentally approach to sustainable farming. ? We have been working with local authorities such as Leeds and Sheffield City Councils, providing policy briefs to support the development of local food plans. ? Evidence has been submitted to government enquiries including the Environment, Food and Rural Affairs Committee Inquiry into Food Security. ? We have worked with Fareshare and other food charities to evaluate the nutritional quality of food donations. ? We have used the Synergy Fund to map civil society organisations who seek to influence UK food policy. ? We have undertaken a review of dietary interventions to help understand 'what works' at a national and international scale. |

| Collaborator Contribution | There is considerable interest in making changes to transform the UK 'food system' to improve the health of people and the planet. Our food system is complex, and can be described as the interconnected system of everything and everybody that influences the activities involved in bringing food from farm to fork. Many researchers, policymakers, and practitioners, including businesses and charities, are exploring and testing ways to intervene in the system, to make it more environmentally sustainable and promote population health. There is a wealth of ideas on solutions, but these are spread across many different sources, making it difficult to get a clear picture of what is possible. Even within the Transforming UK Food Systems Programme, there are multiple projects looking to identify, list, taxonomise and test possible solutions to changing parts of the system. Our proposed Food System Transformation Solution Bank will bring a range of sources together to make it easier for researchers and decision-makers to identify potential changes which can be made and tested, to reduce inefficiency and transform the UK food system. |

We joined a collaboration for a Synergy fund collaboration. Reynolds will contribute expertise on sustainable diets, the development of sustainable recipes, and culinary history. He will connect the current synergy project as well as planned follow-on work with a range of academic and non-academic stakeholder partners including BBC Good Food, the Guild of Food Writers, the Sustainable Restaurant Association, Menus for Change, and the University of West London Culinary Arts Management Course. |
| Collaborator Contribution | Alex Sim (University of Bristol Catering Operations, Development Chef) - Considerable expertise in meal development, sustainable menus, and large-scale catering operations. Sim will form part of the assessment panel in our cooking competition. TUKFS project partner contributions: Hardman will contribute expertise of working with schools, communities and retailers to instigate food-system change and with disadvantaged communities to understand the drivers of healthy, sustainable consumption. She will connect the project with her extensive networks of academic and stakeholder partners, both during its lifetime and the subsequent follow-on work. At the beginning of the project we will invite all TUKFS projects and consortia (including the CDT) to nominate a chef or meal provider to participate in our cooking competition. Here, we will strongly encourage broad representation from different sectors, incorporating schools, universities, hospitals, and community-based initiatives. We will also invite TUKFS teams who are developing novel and sustainable foods (e.g., Pasture to Plate (P2P), Raising the Pulse (RTP), UK Sustainable King Prawn Project, BeanMeals) to supply their ingredients for use in our cooking competition. In addition, we will draw on the expertise of Matt Tebbit (University of Reading, Head of Bars and Dining) who delivered a workshop on transforming catering for health and sustainability at the last annual meeting of the TUKFS network. Tebbit also works closely with Menus of Change - an international consortium of University development chefs which is an obvious partner to facilitate future roll-out of our approach at scale. Dr Simon Blyth (University of Bristol) - Extensive knowledge of food marketing, brand activism, and consumer science, with a longstanding interest in design innovation for large commercial food producers. Blyth will advise the team on next steps for wider translation and application of our findings. |

I was invited to join the Farmer-Scientist Network of the Yorkshire Agricultural Society following my contribution to the Great Yorkshire Show Regenerative Agriculture tent, and subsequently applied and was appointed vice-chair of the Farmer-Scientist Network in 2023. The session was well attended with about 100 participants, and my presentation showed how leys introduced into arable rotations build disease-suppressive soils, based on the findings of the MycoRhizaSoil and follow-up work from the SoilBioHedge project with a Sheffield-based PhD student Nancy Muringai. This generated considerable interest in the audience, and I played a leading role in the panel discussion part of the session as a result of the audience interest in the issues raised and the findings we reported. There was strong engagement and interest from farmers and also from members of Defra. |

All the publications arising from the projects were printed and displayed and used to explain the key findings of the effects of leys on recovery of earthworm populations, and the effects of the leys on soil structure, carbon sequestration and soil hydrological functioning. Spend 4 days on the stand meeting farmers, agronomists, local and regional counselors, and explaining our key findings. Over 100 people visited the stand including some school groups. |

Invited by the Yorkshire Agriculture Society to co-lead (with collaborators at the University of Leeds) the Regenerative Farming stand in the Innovation Zone at the Great Yorkshire Show (11-15 July, with the marquee, power, tables and infrastructure and free entry tickets to the sell-out event, provided by YAS). Four full days of attendance plus a half-day setting up the stand with posters and 120 slide continuously rolling presentation I have created on our research related to regenerative farming practices. This was accompanied by banner posters and a soil monolith demonstration. I served as one of the judges of the Innovation Zone Award, (1 half day of judging duties, plus preparation). I co-ran a soil health clinic for farmers, which was highly successful and have been invited to repeat this in 2024. I gave an invited talk in the Innovation Zone: Biological regeneration of soil health and fertility using leys, to farmers and land managers. Met with Adam Henson from Countryfile - and was able to demonstrate our soil health metric and the effects of leys on soil structure. Considerable follow-up interest from farmers and will be contributing in a similar way to the Great Yorkshire Show 2024, by inviation. |

| Results and Impact | Our written evidence was published online: https://committees.parliament.uk/work/7139/soil-health/publications/written-evidence/?page=2 In this evidence we provided a clear statement and supporting evidence for the adoption of routine measurements of organic carbon in >2 mm water stable aggregates, and in the remaining soil mass as a key indicator of soil health- integrating biological, chemical and physical soil health variables in a single consistent and quantitative measure that is responsive to field management practices, and which directly reflects soil functionality (carbon, water and nutrient storage, drainage and functional biology (earthworm activities, mycorrhizal fungi etc.). Our written evidence was cited in repeatedly in the first report of the committee, but the importance of the soil health metric we have shown to be invaluable and effective for soil health monitoring has received no comment, which is surprising given the committee was specifically requesting advice of effective soil health metrics. Many of the other points made in our submission were included in the report- so have potential to influence policy. |

From our research on leys reintroduced into arable rotations (SoilBioHedge, MycoRhizaSoil and SARIC grants)- showed how these leys can regenerate soil health - and the biological mechanisms by which this regeneration occurs. We also presented the evidence that soil health can be monitored effectively by measurement of the organic carbon amounts in water-stable macroaggregates >2 mm compared to the organic matter content of the whole soil. |
