Abstract
The project will investigate the use of chemical and enzyme methods for extracting oligosaccharides for plant cell walls, with the aim of discovering a replacement for the sucrose which can be used in food products.

Results and Impact | I was part of a team from the university of surrey nutrition department in partnership with teams from Warwick and Oxford university, jointly hosting a stand celebrating 150 years of the Periodic Table (since it was first proposed by Mendeleev), entitled "In Your Element". More than 12000 people visited and engaged with the stand, with members from the team explaining the importance of elements in everyday nutrition, as active ingradient in drugs and ocean life. |
