Description Many findings generated on the multisensory effects of context on flavour perception, including the impact of aircraft noise on the brain's ability to perceive salt, sweet and sour from the tongue, and how umami rich foods and drinks, like tomato juice are immune to this effects. This had led to PI being commissioned as a consultant to create sandwiches for airports which will have deliver powerful tastes at altitude. Discovery of texture sensitivity in tasters leading to liking and no-liking of foods.
Exploitation Route Many food and drinks companies and airlines have taken into account my research findings to create enhanced eating and drinking experiences for consumers.
