Description | Many findings generated on the multisensory effects of context on flavour perception, including the impact of aircraft noise on the brain's ability to perceive salt, sweet and sour from the tongue, and how umami rich foods and drinks, like tomato juice are immune to this effects. This had led to PI being commissioned as a consultant to create sandwiches for airports which will have deliver powerful tastes at altitude. Discovery of texture sensitivity in tasters leading to liking and no-liking of foods. Collaborations with partners led to further impacts with gallery and museum sector and through festivals. Collaborative discussions with other Themes and with award holders. |

Description | The food and drinks industry, and fragrance industry have made use of my findings and I have been invited to consult for several companies, including multinationals such as Unilever, Diageo, and Firmenic. Several chefs and restaurants have incorporated ideas from my research into their practice and the wine industry has invited me to train some of their experts. Special events were run at The UK Champagne Bureau and Berry Bros and Rudd on my designs for Champagne and music matching. Collaborations with Tate Modern and The Getty Centre have continued to run events and plan future events. Clinicians and patient advocate groups have made use of the Post-Covid research on loss of smell and taste, anosmia and parosmia. Colleagues and I also contributed a deep dive report, "Accessing Healthcare before, during and after the Pandemic' for the British Academy: The Covid Decade report for the Office for Science. I have consulted for multinational food and drinks industry companies and I contributed to Professor Chris Van Tulleken's BBC Podcast, A Thorough Investigation looking at the influence of ultra-processed foods on health and how the food industry creates and shapes the products. My research features in his book, Ultra Processed People, and I have been asked to provide evidence to the House of Lords Committee on Food, Diet and Obesity. I have also contributed to a BBC One documentary on the topic of Ultra processed food and its effect on our health. |

PI Contribution | We have designed and exhibited a Multisensory Maze, with a number of carefully created sensory and musisensory experiences fro visitors to undergo and learn from, piloting them for the forthcoming exhibition at Kidspace Museum as part of Pacific Standard Time Arts in 2024. There have been refinements and co-design of new features of the maze for subsequent display and running of it in other museums. |

PI Contribution | Together with a team of researchers from the Centre for the Study of the Senses, we ran fourteen taste experiments at Tate Modern over four days, called TASTE AT TATE drawing over 1900 participants from the public. This was part of our partnership with Tate Exchange at Tate Modern to bring a new crowd of visitors to the gallery. The experiments collected data and the results are being prepared for publication. There was press attention for this series of events: BBC Radio 4 All in the Mind recorded there and Barry Smith's experiment, Tasting Shapes, was featured in Victoria Moore's wine column in the Telegraph.A second series of events and experiments will take place in March 2018 called Self-Impressions featuring twenty experiments by artists, engineers, philosophers, psychologists, neuroscientists, looking at how we generate sensory experiences and receive feedback from our environment and from others. This is part of Tate Exchange's theme of Production. A third event on Movement took place over a weekend, occupying the 5th floor of the Blavatnik Building at Tate to run a series of experiments and experiences in collaboration with LMU Munich, Institute of Cognitive Neuroscience at UCL, and Studio Olafur Eliasson. |
Collaborator Contribution | Our partners at Tate Exchange provided a large floor space on the firth floor of the Blavatnik Building as well as administrative, organizational and press support to help run these experiments over several days. They provided advertising and staff help to prepare and run these experiments. They produced evaluation of the visitor experience. |

Results and Impact | Hosted a series of short talks and practical tasting experiments at the Triennale Design Museum, Milan to coincide with the opening of an exhibition on Taste (Gusto). The event was sold out and drew over 200 participants. Participants were interested in the event asking questions and discussing the experiences with the event organisers after the activities. This event was organized by AHRC Science in Culture Theme Leadership Fellow Professor Barry C Smith and involved Rethinking the Senses co-investigators Professor Charles Spence and Dr Ophelia Deroy. Following the workshop, one of the contributors, Caroline Hobkinson a food artist has been invited to exhibit at the Milan Expo 2015. An essay prepared for the Gusto exhibition publication will be republished in the Milan Expo 2015 catalogue reaching new audiences. |
