Crop management strategies for low asparagine grains to limit acrylamide-forming potential

Lead Research Organisation: University of Reading
Department Name: Food and Nutritional Sciences

Abstract

Project aims:
1. Evaluate impact of crop management on f-Asn content of elite wheat germplasm, the role of nitrogen and sulphur fertilization, and the effects of other minerals and irrigation.
2. Investigate the molecular basis for differential sulphur responses between varieties.
3. Investigate diurnal regulation of f-Asn synthesis and breakdown in wheat.
4. Characterise asparaginases naturally present in wheat grain.
5. Analyse a soft wheat mapping population to identify QTL for f-Asn concentration.
6. Screen elite varieties for the presence/absence of an f-Asn synthetase-2 gene on Chromosome 3B and evaluate the effect of the loss of this gene on f-Asn concentration in the grain.
7. Quantify the correlation between variation of f-Asn content in grains and AA content in baked goods
